Earth Day Veggie Sandwiches
In honor of Earth Day, I put together a beautiful array of grilled veggies for a delicious, healthy lunch ( or dinner) that is worth sharing!
These HEARTY sandwiches got dressed for the occasion!
I simply wrapped vegetable printed paper on top of waxed butcher paper, then tied the combination with butcher’s string.
Using wooden cutting boards ( these our own handed crafted ) can add a beautiful, warm element to your table
Add fun tags or labels by simply typing what inspires you and print!
Try these easy veggie lovers sandwiches and enjoy!!
Recipe:
. Green, red, and yellow peppers
. Baby bella mushrooms
. Organic spinach leaves
.Cauliflower
. Broccoli
. onions
Slice one large orange sweet potato, place on a cookie sheet, drizzle with organic extra virgin olive oil and bake at 425 degrees until tender. Chop and sauté the remaining veggies in olive oil.
Sprinkle in black pepper, a pinch of sea salt, oregano, a dash of turmeric and cumin along with a dash of garlic powder.
Remove the slices of sweet potato from the oven and add to the veggie mix.
Place the veggies on a hearty multigrain roll or bread of choice. Top with a slice of sharp provolone cheese and place ( on a cookie sheet) in the oven set to broil.
In just a matter of minutes the cheese will melt and the roll with become slightly golden and crispy.
Serve with a dipping sauce made with horse radish, a dollop of mayo and seasoned with blacken hot pepper for even more delicious flavor! . Sweet potato slices
